This is because the cuisine that is served will be remembered by most guest who attend the reception. Caterers can have full order books for up to a year in advance, so it is wise to book the one you want as early as possible. A simple time line for finding a caterer is to start looking for one at 10 months before the wedding. Make sure that you have your caterer booked by 8 months, and you have the menu sorted by at least 6 months before the date.
A good caterer does more than one might think. They are trained in the selection of food and preparation, reception staging, table waiting and the cleaning up afterwards. Some catering companies will offer to decorate for you, supply the bar staff and possibly provide the cake. Others may only prepare and serve the food and then clean up.
